“We have this carbohydrate total fear in this country,” says Dr. Christina Cummings, Family Physician. Though the current cultural climate is very against carbohydrates, they are essential nutrients. “It’s a nutrient that provides energy, and we need carbohydrates.” There are different types of carbohydrates, however, and different types of carbohydrates can be healthier than others. “If you’re eating plant-based carbohydrates, eat to your heart’s content…my feeling is that our diets should be at least 70% carbohydrates.”
